Korean Spicy Bean Sprouts
This is a great simple side dish or main that is packed full of flavour. When I want a light meal that I can whip up in no time this is a go to. Throw this over some rice with a fried egg on the side and you have a quick and healthy meal. I add a touch of honey to my version. Feel free to omit that if your just like it spicy, but I find the honey balances out the spice.
Bean Sprouts:
I find that the loose bean sprouts that you find at the asian grocery store much more crisp and fresh than the bagged ones. If you only have bagged options just try to buy the ones with the later expiry date and make this dish right away because bean sprouts go bad pretty quickly!

Ingredients
1 lb bean sprouts
2 stalks green onions
Sauce
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp Korean chilli flakes
1 tsp honey
1 tsp sesame oil
Instructions
Add all sauce ingredients to a clean bowl large enough for the bean sprouts
Rinse the bean sprouts
Boil 2-3 cups of water
When water is boiling blanch the bean sprouts for 1-2 minutes
Drain the bean sprouts and add to the bowl with the sauce ingredients
Mix well and enjoy!
